A First Look Inside the Newly Reopened Counter Reformation at The Parker Palm Springs
Last night, I had the pleasure of attending the soft opening of the newly reimagined Counter Reformation at the iconic Parker Palm Springs—and it was everything a Palm Springs evening should be: stylish, intimate, and filled with unforgettable flavors.
The buzz in the room was undeniable, and for good reason. My favorite French chef, Hervé Glin, has returned to The Parker, bringing his signature creativity to a menu revival of elevated small plates that are as beautiful as they are delicious. It was such a joy to see him back where it all began.
Counter Reformation remains one of Palm Springs’ best-kept secret spots, seating just 22 guests at its intimate counter. The exclusivity, the ambiance, the dim lighting—it all adds up to that unmistakable Parker charm.

With the cooler desert temps settling in, it made the evening feel even more magical. A glass of champagne, incredible food, and one of the most atmospheric lounges in Palm Springs—it was truly the perfect night.
